Thai Sweet Chilli Chicken Wings
This is a really quick and easy recipe for a burst of fabulous summer flavour! Marinade the chicken wings overnight with La Saucy Salsa Coriander, lime and sweet chilli sauce, and then cook them in a hot griddle pan or pop them on the BBQ.
1 kg chicken wings, or mixed chicken wings & drumsticks
For the marinade:
3 tbsp La Saucy Salsa Coriander
4 tbsp sweet chilli sauce
5 tbsp olive oil
A splash of lime juice
A big pinch of lime zest
Salt and black pepper
Fresh coriander to serve (optional)
This recipe is really simple, but the one thing you must do is allow enough time for the chicken to marinate – several hours at least, but overnight is best. Pop all the ingredients together in a bowl, mix really well, cover and refrigerate.
When it’s time to cook, oil the griddle pan and get it hot on the hob, then cook the chicken wings in batches until the outside is really crispy and the chicken is cooked all the way through. Sprinkle with fresh coriander leaves and serve with sour cream for dipping and a fresh summer salad.
